Helen’s Fantastic Fishcake Recipe
Homemade Fishcakes - simple as simple gets. This makes 8 good sized fish cakes
Put 4 large baked potatos in the oven, gas mark 220. Rub sea salt into the skins and then turn the potatoes every 20 mins or so. They will take about 1 hour and 45 minutes.
When the potatos are nearly ready, get a baking tray and place foil down - leave enough so you can wrap the fish up!
Place 3 salmon fillets and 2 cod fillets onto the tray. Sqeeze a little lemon and drizzle a little white wine if you have any! Wrap the fish up and cook for 12-15 minutes or untill cooked. Please low down the oven as opposed to the top where the potatoes should be
Once cooked take the potatoes and fish out. Leave both to cool.
Flake the fish and the inside of the potato into a bowl, add salt, pepper and a few knobs of butter.
Lightly blend the mixture, but be carefully not to mash! Add about 2 handfuls of finely chopped spring onions and about 1 handfull of finely chopped parsley.
Once all the mixture is together, put in a fridge and leave for a few hours untill chilled.
Once chilled you can make the mixture into round patty shapes and again leave to chill for at least half an hour
You then have 2 options
Option 1 - lightly dust in seasoned flour (sale & pepper) flour and fry straight away
OR
Option 2 - dust in flour, then in eff then in breadcrumbs. Dont buy shopped breadcrumbs use some bread toast it and crunch up to make your own crumbs but remember season them!
Serve with a wedge of lemon and salad with perhaps a oil and balsamic reduction dressing

Grilling vs. Barbecue
Grilling and Barbecuing, two of the most popular cooking methods in the U.S., especially in warmer weather. There are some who know the difference between grilling and barbecuing, and some who don’t. Do you?
To put it simply, Grilling is fast cooking over high heat, while barbecuing involves a slower cooking method, over a lower heat.
Grilling is generally done over a gas flame, or hot coals. Tender cuts of meat are best for this cooking method. The quick cooking and the high heat seal in the juices, creating a juicy piece of meat, but leave the meat on too long, and it will dry out, as with any dry cooking method. Barbecue sauces can be used, but since the heat is so high, it should be added right at the end of the cooking time, especially for sweeter barbecue sauces, so that the sugar in the sauce doesn’t burn. Vegetables and fruits can also be grilled, as they don’t need a long cooking time. Peaches and pineapple are particularly good for grilling, the natural sugars in the fruit carmelize over the high heat. When you grill food, you need to pay attention to it, so it doesn’t get overcooked. You need to stay by the grill the whole time.
Barbecuing is typically done over charcoal or wood, although gas can be used. I’ve seen kalhua pig being cooked slowly on a gas grill, but usually, barbecuers will use either charcoal or wood. The meats usually used in barbecuing are tougher cuts of meat, such as the beef brisket, or pork ribs. These meats benefit from the long, slow cooking process, becoming so tender that they will just fall off the bone. Since the cooking process is slower, and the heat not as high as grilling, barbecue sauce can be brushed onto the meat throughought the cooking process, forming a delicious glaze on the outside of the meat. Apple juice is sometimes sprayed onto the meat to keep it moist and flavorful. Damp wood chips added to the fire add a delicious smoky flavor to the meat.
Some meats, like chicken, will benefit from either cooking method. It’s great either grilled quickly with a glaze or barbecue sauce applied towards the end of the cooking time, or slowly barbecued, absorbing the flavors of the smoke.

Going Halfway Around the World: How to Make German Cookies
I absolutely loved experimenting with foreign recipes, especially dessert recipes, when I was in high school. One of my favorite ones to make is German Cookies. I first learned of it after I’d tried a recipe for German Crumble Cake.
Today it’s the second most common dessert I make. The cookies themselves aren’t really sweet (unless I’ve been making them wrong all this time), but sweetness has never been a “must-have” factor for me when it comes to a dessert recipe. And you can always experiment by placing icing on the cookies or adding more sugar.
German Cookies is also a real ‘hands on’ recipe that contains a hefty bit of butter. Hope you enjoy!
German Cookies
- 4 cups of flour
- 3/4 cups of sugar
- 2 sticks of butter
- 2 eggs
- 1 teaspoon of Vanilla Extract
Take a sifter, a rolling pin, a baking board, and cookie cutters (optional). Sift the flour onto the baking board. Make a dent in the middle of the flour.
Pour the Vanilla Extract onto the flour and sprinkle sugar on top. Cut the butter into small pieces and scatter them on the flour. Crack the eggs and pour the yolks into the dent.
Mix all ingredients by hand, and smooth the dough flat about a half centimenter thick with the rolling pin. Engrave the dough with cookie cutters or roll and flatten into circle shapes.
Grease a cookie sheet and place cookie dough shapes on top. Put the oven on 350 degrees Farenheit (ovens may vary) and back for 10 minutes or until golden brown.
Let them cool. Any leftovers should be kept covered so they will last.
And there you have it! You’ve just made delicious German Cookies!

We now prefer the light-bodied wines rather than the heavy ones that were so popular a few years ago and they are really best consumed within three years of harvest (for white) and five years (for red).
Keep your store of wines away from the light and the heat. It’s not necessary to keep the bottles on their sides as they’ll be fine standing upright for up to a year.
If you’re taking your wine with you on a long journey you should try to keep it as cool as possible. Cool bags are very useful but, failing this, make sure that the bottles are kept out of direct sunlight. If you’re leaving your car for a period you could try putting the bottles underneath in the shade, but it’s not a good idea to forget about them! When you eventually arrive give the bottles time to return to room temperature before you open and consume.
The barrels used for storage were burned on the inside during the Middle Ages. This created sulphur dioxide which preserved the wine for much longer. In very cheap wines this is still used and can bring on appalling headaches and allergic reactions in some people (tip: it’s best to avoid cheap wines!).
When you’re serving a strong red wine you may find that there’s a lot of sediment. This certainly doesn’t want to go into the glass. Historically (and if you have time) these wines should be decanted. To do this correctly you should make sure that all the sediment has been taken from the sides of the bottles and give it time to settle on the bottom. This could take several days to work and if you want to be a real perfectionist you could give it up to a couple of weeks. When you do pour the wine into the decanter pour it very slowly and gently and don’t let any of the sediment pass through.
And the last question? Is it best to use a corkpuller (a handle with two prongs) or a cork screw? The corkpuller will fit into your pocket and is considered the best by most professionals as it’s much quicker, but the technique does need a lot of practice. If, however, the cork is not tight or is plastic, a corkscrew will do a better job for you as the pressure of the prongs with a corkpuller can easily push the cork into the bottle. Whatever you use, however, the important thing is that you concentrate carefully and if the cork starts to move you change to a corkscrew.
