Calcium: Another Perspective - Part 1
Here we go again… more confusing news. I can hear the rumbling frustrations of the millions of women who have been diligent with their calcium supplements in the belief that it helps prevent osteoporosis; a dangerous, sometimes crippling condition primarily associated with post-menopausal women.
In recent news, it was suggested that perhaps all those years of religiously taken your calcium supplement may not have done much good. A report published in the New England Journal of Medicine (Vol. 354, pp. 669-683) is the source of this recent hubbub. The study organizers followed more than 36,000 women, and they have concluded that supplementation did not actually improve the risks of hip fractures during the course of the study. But the news report is quite misleading.
The study focused on calcium and vitamin D supplementation, and concluded that although they did record an increase in bone density, they did not notice any substantial difference in actual hip fractures over the course of seven years. However, my concern with this broad generalization is the same concern I had in all the years of the “experts” telling women just the opposite; they CAN minimize their risk of osteoporosis by taking a calcium supplement. The bottom line is… it is just not that simple, but how we wish it were.
As is the case with many health issues, there is no such thing as a magic bullet. Consider any sub-standard health condition and you know that there is no “one size fits all”. Lifestyle choices, hereditary issues and environmental factors often conspire against achieving wellness. And this “calcium push-pull” is a classic example.
For many years, I have answered questions from our customers asking about calcium supplementation; should they or shouldn’t they. I usually begin my response by asking a lot of my own questions about their personal habits, general health condition, specific symptoms or concerns, and desired outcome or goals. When I receive an inquiry about calcium supplements, I begin my response by verbalizing a rhetorical question:
“Why do you suppose it is that after several decades of doctors recommending that women take calcium supplementation to prevent osteoporosis, we continue to have an ever increasing rate of osteoporosis in our aging population?”
Even though a rhetorical question should not be answered, I am going to answer it:
“It is because the issue is much more complicated than simply popping a pill.”
This is one of those times when I tell people to “read between the lines”. What else is going on here to affect the results the subjects received in the study? Could it be lifestyle, environmental factors or heredity? Yes, of course.
Heredity is an issue that might be answered at the beginning with questionnaires about family history that might suggest a predisposition to a specific ailment. A well-conducted study would likely have accounted for that. However, what I am unsure of are the other two factors.
Lifestyle and Environmental factors (or what I call Dimensions) are what I primarily focus on when I am responding to questions about calcium supplements. Within the Lifestyle Dimension, I would include exercise habits, consumption habits or indulgences, and mental stress conditions, to mention a few. Within the Environmental Dimension, I primarily discuss food quality and toxicity levels that may be present in your surroundings.
The reason I focus on these other Dimensions is because it hints at the complexity of the whole calcium debate. My point is that since we know that osteoporosis has been an increasing problem for many decades (despite the early declarations that calcium supplementation is the key), perhaps we should be paying attention to not only how much calcium is going in but also how much calcium is going out. In other words, what is contributing to an increasing rate of calcium depletion? Why is the mineral calcium being compelled out of the bones and vanquished from the body?
My purpose for mentioning these topics now is to encourage a wider perspective when you are questioning the meaning of the results for this latest calcium study. We have always been proponents of high-end calcium supplements, but only as a part of the greater whole. Calcium will only benefit someone when they carefully select a quality form of calcium as one piece of the very complex puzzle. Further, someone must consider several contributing factors when developing a plan to combat the risks of osteoporosis.
And when you are pondering the claimed results of this study, remember to step back and read between the lines. If you currently are on a calcium supplement, continue taking it. In subsequent segments to this series I will help you to understand why.
In “Calcium: Another Perspective - Part 2″, I will cover in more detail some of the topics within the Lifestyle and Environmental Dimensions that can affect calcium absorption and depletion. And there will be some additional comments on the publicized results of this most recent study.

Holiday Leftover Ideas
The holidays are a time for friends and family and good old-fashioned home cooking. Who can resist the tempting smells coming from the kitchen at this most favorite time of year? Holiday dinners were among my favorite, most memorable meals as a child. Our family shared our holiday meals with different relatives each year, but wherever we were and whoever we were with, we always knew to expect good food and enjoyable family gatherings that we would remember for months to come.
When I was a child, it was always a tradition in our family to have turkey for Thanksgiving and ham for Christmas. We would also always enjoy mounds of creamy mashed potatoes and gravy, candied yams with lots of butter, brown sugar, and melted marshmallows, and I could always count on sampling my dad’s famous fruit salad. He would meticulously cut each fruit into bite-size pieces (apples, oranges, grapes, bananas, and raisins), and mix it all together with a generous portion of homemade whipped cream. Homemade cranberry sauce was also always a special holiday treat.
Now that I’m married we have even more family to share our holiday meals with. With so much family, though, we rarely get to host dinner at our house. It’s always nice to go to someone else’s house to eat, but then we don’t get any of the leftovers! We usually end up taking advantage of the holiday sales at the supermarket though, and then we can have our own little feast. I’ve had a lot of fun over the years devising ways to use up the leftovers from our own holiday meals–and I’d like to share some of my favorite recipes with you.
Turkey and Rice Soup
2 1/2 cups turkey, cooked and diced
1 can cream of mushroom soup
1 6-ounce box long-grained rice
2 cups mushrooms, sliced
1/2 cup onion, diced
1 cup carrots, grated
In a large saucepan, combine all ingredients with 6 cups of water. Simmer, covered, until rice is cooked, approximately 30 minutes. Great with fresh bread.
Turkey Spaghetti
8 oz. spaghetti or other pasta
1 can cream of chicken or cream of mushroom soup
3/4 c. grated mild cheddar cheese
2 c. leftover cooked, diced turkey
Salt and pepper to taste
Optional - diced celery and/or diced onion to your taste
Prepare soup as directed. Prepare spaghetti as directed then drain. Combine spaghetti, soup and remaining ingredients. Stir until cheese melts. Serve and enjoy!
Mashed Potatoes and Ham Bake
2 cups mashed potatoes
2 tablespoons mustard
2 cups ham, cubed
1/2 cup cottage cheese
1 cup cheddar cheese, grated
Preheat oven to 350 degrees. In a medium-sized bowl, mix mashed potatoes and mustard. Spread potato mixture in the bottom of a greased 8-inch square baking pan. Arrange ham on top of potatoes. In a small bowl, mix cottage cheese and cheddar cheese. Spread over ham. Bake until mixture is heated through, about 30 minutes.
Chopped Ham Sandwiches
2 lb. leftover ham, chopped into bite-sized pieces
2 tbsp. brown sugar
1 c. ketchup
1/4 c. vinegar
1 c. water
1 tbsp. Worcestershire sauce
Fry ham in a skillet and sprinkle flour over it. Stir in the remaining ingredients. Simmer for 1 hour and serve on toast or hamburger buns. Makes 15 to 20 sandwiches.

History of Spanish Coffee
When we think of Spanish coffee we tend to think of a steaming mug of coffee with rum or other alcohol and topped with whipped cream, but the Spanish influence on the coffee industry reaches much further than the bar in a ski lodge.
Spanish ships carried coffee plants and seeds to many remote areas of the world where coffee was not native but soon became central growing hubs. Descendants of Spanish conquistadors settled in Central and South America where they created huge plantations for growing Spanish coffee.
Coffee originally came to Spain with Turkish immigrants. Not much, if any, coffee was actually grown in Spain but they developed a method for roasting that produces very dark, almost black oily beans that make very strong coffee that is known as Spanish Roast, or Dark French Roast.
Spanish coffee growers in Latin America accounted for nearly half of all the coffee exported; however, most Spanish coffee served in Spain comes from Angola and Mozambique and is roasted dark to bring out the full flavor.
Coffeehouses in Spain are usually elaborate, elegant gathering places with high ceilings, ornate furniture and waiters in white shirts and black ties. The customers are appropriately dressed and the atmosphere is somewhat reserved. Spanish coffee houses are quite different from other regions of the world where a casual, informal environment would be expected.
Early Arabic coffee traders tended to gouge the Spanish coffee merchants on pricing and the result was the highest priced cup of coffee in Europe. Portugal, Spain’s neighbor, had colonies in several coffee growing regions in Africa and sold coffee to the Spain at more reasonable prices, however the quality was not as good and some importers chose to pay the higher prices for the Arabian coffee.
Whether the Spaniards were the first to add alcohol to coffee is unknown, but this practice is very common in Spanish coffee houses even in the morning hours so it is possible. The familiar drink on cold afternoons does have its origin in the rich and elegant coffeehouses of Spain.

High Altitude Baking
High altitude baking can be a real adventure for the cook, with a number of challenges to keep you on your toes. The higher you are in elevation, the less pressure there will be. How does this affect your baking creations? Low air pressure creates increased evaporation of liquids during the baking process and this can cause your cakes to fall. Baking at high altitudes means a few more adjustments so that your baked goods will come out perfectly, ready to tempt the finest of taste buds.
Start by following the high altitude recipes by the letter. For some bakers, this will work out fine. For others, changes will be necessary. Begin with making adjustments to your oven temperature by 15 - 25 degrees F. Next, adjust the ingredients in your recipe. For cakes that are supposed to rise, using either yeast or baking powder, you will need to make some changes.
If you are using yeast during high altitude baking you will have to make sure that the dough rises slowly. For cakes using baking powder make certain not to over-beat the eggs. You will also have to decrease the amount of baking powder used.
A decrease in atmospheric pressure will cause gases to expand easier. For your lovely meringue toppings, meringue (angel) pie shells, angel and sponge cakes, follow the following suggestions: Whip the egg whites to medium-soft peaks instead of stiff peaks. Add more stiffening with a bit more flour and a bit less sugar. Also, with your increase in oven temperature by 25 degrees F, the batter will have a better chance to set before the air bubbles or leavening gases have the chance to become too expansive.
When preparing puddings and cream-pie fillings above 5,000 feet, using a double boiler will not provide you with the maximum gelatinization of starch. You can simply use direct heat rather than a double boiler.
High altitude will affect the rising time of bread the most. At high altitudes, the rising period will be shortened. To maintain the development of a good flavor in your breads, you will need to preserve the longer rising period. Punch the bread dough down twice to give the time for the flavor to develop. Remember that flours tend to be drier and able to absorb more liquid in high, dry climates. Use less flour when bringing the dough to the proper consistency. You may want to experiment a bit with this for best results.
When buying cake mixes, look for the high altitude baking instructions on the box. Your quick breads will vary from muffin-like to cake-like in structure. The cell structure of biscuits and muffin-like quick breads should be firm enough to withstand the increased internal pressure at high altitudes without the need of adjustment. Be cautious, though, as a bitter or alkaline flavor can result from inadequate neutralization of baking soda or powder. To avoid this, reduce the baking soda or powder slightly and this can often improve your results. The quick breads with a cake-like texture will be more delicately balanced and can often be improved at high altitudes when you follow the adjustment recommendations given for cakes.
You can also take advantage of a variety of charts available for high altitude baking. These will come in handy and help you determine what adjustments to make according to how many feet above sea level you are. The higher the altitude the more adjustments are needed.
The following guidelines may be used as a general rule of thumb. Remember to test each recipe, first, for best results:
3,000 to 4,500 feet:
decrease baking powder 1/4 tsp per required tsp
decrease liquids by 1 Tbs for each cup required
5000 to 6000 feet:
decrease baking powder by 1/4 tsp for each tsp. required
decrease sugar by 2 Tbs for each cup required
increase liquid by 2 to 4 Tbs for each cup required
6000 feet and above:
decrease baking powder by 1/4 tsp - 1/2 tsp for each tsp. required
decrease sugar by 3 to 4 Tbs for each cup used
increase liquid by 2 to 4 Tbs for each cup used
Altitudes over 10000 feet: same as 6000 feet, but add an extra egg to recipe
High altitude baking can be fun. As you experiment, you will come up with the formula that works for you at your level of elevation. You should begin with the suggested adjustments and then make minor tweaks here and there. Your good efforts will produce quality baked goods, sure to please even the gourmet in all of us.

Where There Is Life There Is Hope
There is a dictionary definition of hope that says: HOPE: A desire - with
expectation of fulfillment. So then, what is desire? Again the dictionary explains
that “DESIRE” is a strong impulse to have or be something.
With those definitions in mind, consider these thoughts about hope:
The Hope Diamond- mined in India in 1668, was named (in 1839) after one of its
many owners, Henry Hope of England. (Now it is in the Smithsonian, in Washington,
D.C.) It is a many faceted jewel with an original weight of 177 grains (112.3/16
carets- now 45.52 carets). In fact, it is one of the largest and most valuable jewels
ever mined. But, it has often been reported to bring bad luck to those who possess
it. Even so, Evalyn McLean, one of the owners of the Hope Diamond, disregarded
those superstitions and said: “What tragedies have befallen me might have occurred
had I never seen or touched the Hope Diamond. My observations have persuaded
me that tragedies, for anyone who lives, are not escapable.”
This, I believe, reveals her strong conviction that where there is life there is hope,
regardless of the opinions or superstitions of others.
Regarding hope, in his study of emotional intelligence Daniel Goldman said: “hope
means that one will not give in to overwhelming anxiety, a defeatist attitude, or
depression in the face of difficult challenges or setbacks. Hope is more than the
sunny view that everything will turn out all right; it is believing you have the will and
the way to accomplish your goals.”
President Abraham Lincoln understood the value of hope. He knew his hopes would
succeed and that numerous setbacks were inevitable before the Civil War could be
brought to a victorious close.
In addition, Jesus, when praying in the Garden, knew he was on the path that would
soon lead toward God’s eternal hope for mankind.
Now, I say: this life is like a jigsaw puzzle. God knows His work wouldn’t be
complete without us! I don’t know about you, but I am an optimist in that I have
always had great expectations and confident assurance that most of my desires
would eventually be fulfilled.
Now let me say, I have great hope and an enthusiastic hope-filled attitude toward
life. That is, I have always trusted and relied on the confident expectation that my
desires would be fulfilled. But, let me throw in a qualifier statement.
You see, when I was much younger I guess I had some pretty wild and rather
immature hopes and desires. Now I know that they were actually a passing fancy,
something I thought I wanted but really didn’t want or desire. In other words, I was
glad some of those hopes were not realized. What I’ve learned over the years is
something I’d like to pass along to you and it is this: Before I was a saved believer in
Jesus, I had a lot of self-centered desires and hopes. After I was born again, my
viewpoint gradually changed to that of a Christian with a heartfelt need, desire and
hope to please my Lord. Then, I began to try my best to see things as if I were
seeing them through the eyes of Jesus.
Gradually, over a long period of time (I guess I’m a slow learner), I began to submit
my desires and hopes to the Holy Spirit and to ask Him for His advice, wisdom and
guidance.
Slowly it dawned on me that in order to lead a life that was pleasing to Jesus, I had
to learn to put things that were related to: I, me, my and mine in the background
and put the Lord’s hopes and desires for me - regarding His glory - in the
foreground.
Thus, in His gentle way, Jesus showed me that He wanted the things he’d created in
me to simply be available to Him for His purposes whenever he needed them. So, at
that point it became my hope to always be attentive to the desires and needs of my
Lord.
You see, He only made one person, one human being, exactly like me. Therefore,
there must be something unique and special about me. Something the Lord needs
to make use of today, tomorrow or at some special time in the future. I’m sure it
must be something He knows only I can do for Him.
So - now, with this insight in mind, I try my best to keep myself accessible and
available to Jesus and His needs. I simply tell Him in my daily prayers, that whatever
happens to me in this life, a life where problems are inescapable, I know life goes
on. And, where life is — there — is hope.
P.S. The Acronym: “H.O.P.E.” can be divided into these four ideas. We can picture
Hope as being like a circle that surrounds at least four segments held within the
circle:
H = Holy Spirit
O = Opportunity for change
P = Perspective
E = Eternity
