Harvard’s head nutritionist, Walter Willett, M.D., agreed. “White potatoes are like white sugar and white bread,” he said. Not only do they cause a spike in blood sugar, but they can raise levels of harmful triglycerides and lower HDL (good) cholesterol. Willett maintains that this increases the risk of heart attack, particularly in people with insulin resistance.
Two Harvard studies also found that eating a lot of potatoes increases the risk of developing type 2 diabetes. Further, while most vegetables reduce the risk of cancer, potatoes do not appear to have this effect.
Willett says that potatoes should be treated like candy and desserts and eaten only sparingly.
Most Potatoes Eaten are Fried
Eating a plain baked potato is one thing. It is in this form, or, perhaps, roasted, mashed, boiled or steamed, that a case for a healthy potato can be made.
When potatoes come in their processed form — French fries, potatoes chips, tater tots, hash brown patties — no one claims they are good for you. But it is in this processed form that the majority of potatoes are consumed. In fact, from 1977 to 1995 Americans increased their potato consumption by 30 percent — mostly in the form of French fries and potato chips.
What is so unhealthy about fried potato chips and French fries?
- They contain artery-clogging trans fats.
- They contain acrylamide, a cancer-causing substance. While the EPA safe limit for acrylamide in drinking water is 0.5 parts per billion (ppb), a small order of fries contains 400 ppb!
- They are cooked in vegetables oils that may be rancid, thereby producing large amounts of free radicals in the body.
A Heart-Healthy, Antioxidant-Rich Comfort Food
Many believe that potatoes have gotten a bad rap — that they’re actually quite healthy (as long as they’re not fried or processed).
Potatoes are a good source of:

“Potatoes have been cultivated for thousands of years, and we thought traditional crops were pretty well understood,” said IFR food scientist Dr. Fred Mellon, “but this surprise finding shows that even the most familiar of foods might conceal a hoard of health-promoting chemicals.”
How to Best Bake a Potato
It certainly looks like the potato will continue to be a mainstay of the American diet for some time. To best bake a potato, so as to retain the maximum number of nutrients, we recommend the following recipe:
- Scrub the potato under cold running water using a vegetable brush.
- Remove any eyes or deep bruises with a paring knife.
- Leave the peel on — it contains a load of healthy fiber.
- Pierce the potato several times on either side. This will allow steam to escape and keep the potato from bursting.
- Do not wrap the potato in foil; some believe that aluminum foil may transfer toxins to food. Also, the foil will trap moisture, causing the potato to be steamed rather than baked.
- Place potatoes in a 400F oven.
- Bake for 45-60 minutes. Potatoes are done when they give slightly after squeezing.

Nutrition and Eating: Friends for Life
I’ll bet you’ve never even taken the time to consider what your nutritional needs might be, or the importance of that nutrition on your health. Did you know that if the brain doesn’t get enough protein, it doesn’t develop correctly, or if the healthy female body doesn’t get enough flax oil, omega-3 and omega-6 her body’s metabolism will not function correctly and she is more susceptible to weight gain? All these pieces of information and many more are contributing factors to our nutritional needs, and our nutritional needs are met through our eating habits, good or bad.
Nutrition as it applies to our daily lives means that we take in what we need to maintain our body’s healthy state. Nutrition has become an important word thanks to the involvement of the USDA in our daily food requirements, and the FDA’s involvement in determining what is and is not dangerous for us to consume.
But what is our responsibility in the nutrition game? Do we understand what our nutritional requirements are, how to fulfill those requirements, and how to look for real nutritional value in our foods? I’m not sure that nutrition has been successfully addressed in its own right. We hear nutrition in relation to our vitamin intake, our fortified cereals and milk, and in the context that we need “nutritional value” from our food choices. But what really is nutrition when applied to our daily bodily functions?
Nutrition refers to the nurturing of our body, in our ability to keep it healthy and functioning as it is supposed to do. Our ability to provide the body with all the necessary food, vitamins, and minerals so that we continue to thrive in our daily life processes.
How do we determine that we are providing the essential nutritional needs? That knowledge comes by educating ourselves about what our individual needs are, the needs of our family, and then taking that knowledge and applying it to the foods we buy, that we prepare, and that our families consume. Our nutritional needs and caloric needs change as we age, the nutritional needs of a 13 year old teenager are much different to those of a 30 year old woman.
Quite often, our vitamin and mineral needs outweigh our caloric needs. In those instances, we turn to manufactured vitamins and minerals to fill the gap. This is a part of our nutritional needs, also.
Nutrition is one of the most complex areas to gain useful knowledge about, because there are so many components, and because each person has their own individual needs. Women’s needs differ from those of men, and older women’s needs differ from those of a young girl. As we age, our needs constantly change; therefore continual education about nutrition is a fact of life. The information we have available about the health choices and alternatives available to us change daily. Very few medical doctors ever address our nutritional needs, past the needs of a pregnant woman, or an already ailing patient. What about the needs of the well patient? B Complex Vitamins and Their Importance in Health and Disease (Part II)
Pyridoxine
Vitamin B 6 or pyridoxine is actually a group of substance - pyridoxine, pyridoxinal and pyridoxamine - that are closely related and function together. It helps in the absorption of fats and proteins, prevents nervous and skin disorders and protects against degenerative diseases.
The main sources of this vitamin are yeast, wheat, bran, wheat germ, pulses, cereals, banana,
walnuts, soyabeans, milk, egg, liver, meat and fresh vegetables. Deficiency can lead to
dermatitis, conjuctivitis, anaemia, depression, skin disorders, nervousness, insomnia, migraine
headaches and heart diseases.
The recommended daily requirement is 2.0 mg. for adults and 0.2 mg. for children. This vitamin
used therapeuticlly from 100 to 150 mg. daily can relieve painful jonts and the discomforts of
pregnancy and pre-menstrual symptoms. Vitamin B6 is now the most intensively studied of all
vitamins. Researches are on the threshold of a number of promising developments involving
treatments of various ailments with this vitamin. They include hyperactivity in children, asthma,
arthritis, kidney stones, blood clots in heart attack victims and nervous disorders.
Folic Acid
Vitamin B9 or folic acid, along with vitamin B12 is necessary for the formation of red blood cells.
It is essential for the growth and division of all body cells for healing processes. It aids protein
metabolism and helps prevent premature greying. Valuable sources of this vitamin are deep
green leafy vegetables such as spinach, lettuce, brewers yeast, mushrooms , nuts,peanuts and
liver. A deficiency can result in certain types of anaemia, serious skin disorders, loss of hair,
impaired circulation, fatigue and mental depression.
The minimum daily requirement of this vitamin is 0.4 mg. To correct anaemia and deficiencies 5
mg or more are needed daily. Some authorities believe that folic acid is contraindicated in
leukemia and cancer.
Pantothenic Acid
Vitamin B5 or pantothenic acid helps in cell building, main- taining normal growth and
development of the central nervous system. It stimulates the adrenal glands and increases the
production of cortisone and other adrenal hormones. It is essential for conversion of fatty and
sugar to energy. It also helps guard against most physical and mental stresses and toxins and
increases vitality. The main sources of this vitamin are whole grain bread and cereals, green
vegetables, peas, beans, peanuts and egg yolk. It can be synthesised in the body by intestinal
bacteria. A deficiency can cause chronic fatigue, hypoglycemia, greying and loss of hair, mental
depression, stomach disorders, blood and skin disorders.
The minimum daily requirement of this vitamin has not been established, but is estimated to be
between 30 and 50 mg a day. The usual therapeutic doses are 50 to 200 mg. In some studies,
1,000 mg or more were given daily for six moths without side effects. It is useful in the treatment
of insomnia, low blood pressure and hypoglycemia or low blood sugar.
Vitamin B12
Vitamin B12 or cobolamin, commonly known as “red vitamin”, is the only vitamin that contains
essential mineral elements. It is essential for proper functioning of the central nervous system,
production and regeneration of red blood cells and proper utilisation of fat, carbohydrates and
protein for body building. It also improves concentration, memory and balance. Valuable sources
of this vitamin are kidney, liver, meat, milk, eggs, bananas and peanuts. Its deficiency can lead
to certain types of anaemia, poor appetite and loss of energy and mental disorders.
The recommended daily allowance of this vitamin is 3 mcg. Taken in large therapeutic doses
from 50 to 100 mcg., it is beneficial in the treatment of lack of concentration, fatigue, depression,
insomnia and poor memory.

Often first responders to large natural disasters get themselves into a place where the death and the destruction literally makes them ineffective. Their brains are over whelmed and they cannot turn them back on to do their job. This causes them to become part of the problem instead of the solution and thus they are just in the way.
Often Dogs searching for victims of major disasters like earthquakes refuse to work, as they keep searching but only find dead people and no one living, they just quit trying. After natural disasters people often have psychological trauma, which prevents them from functioning properly in normal society, interpersonal relationships and it often affects their jobs too.
Lately there has been much talk about using virtual reality technologies to help soldiers get over shell shock or emotional problems, but I would like to pitch an idea to everyone involved with helping people who have lived through these traumatic events.
